Banana Cream Pie

This recipe for banana cream pie is one that I kind of threw together quickly for New Years Eve because I had a ton of bananas to either use or toss.

I wasn't sure that this pie recipe was going to be any good since I just made it up as I went along (which I do quite often), but after the raves I got, I had to post it here. This banana cream pie was the best I ever had.

Banana Cream Pie

for the crust:

  • 1 3/4 cups graham cracker crumbs
  • 3 tbs. melted butter

in a medium bowl combine the melted butter and graham cracker crumbs. press mixture firmly into 9" deep dish pie pan and bake at 350 for 10 minutes. remove from oven. While the shell is baking prepare the filling.

for the filling:

  • 3-4 large very ripe bananas, mashed
  • 2 eggs
  • 1/2 cup half and half
  • 1 cup milk
  • 1 tsp vanilla
  • 1 package instant vanilla pudding mix
  • 4 ounces cream cheese.
  • fresh whipped cream for topping.

Add the bananas, eggs, half and half, milk, vanilla, cream cheese and instant pudding to a large bowl and mix with electric mixer at medium speed for 2 minutes, scraping sides of the bowl often. Pour banana mixture into baked pie shell.

Bake pie at 350 degrees for 30-40 minutes, or until center is set. remove from oven and allow to cool completly on wire rack.

When Banana Pie is cool, top with a layer of whipped cream. Garnish with fresh banana slices if desired.
