Chicken Soup Recipe
Place the chicken in a large pot and season well with salt, pepper & Italian seasoning. cover with water add rosemary and bring to a boil. reduce heat and simmer for at least 1 hour, or until chicken is fully cooked. remove chicken to platter and allow to cool enough to handle. meanwhile, strain chicken broth from pot through a mesh and return to medium heat. add cellery, onions and carrots and bring back to simmer. Debone chicken and dice into bite size pieces. add chicken back to soup. season with salt & Peper. if broth is too thick, add 1 can chicken stock. soup is finished when carrots are tender. 1 cup fully cooked rice or small pasta noodles may be added a few minutes before serving. best served with lots of crusty buttered bread!
