Italian Egg Sandwich
Italian Breakfast Recipe
In a small heavy skillet heat 2 teaspoons of the olive oil over a medium heat. Crack the eggs into the pan and sprinkle with salt and pepper. cover and cook until the eggs are firm and the yolk almost set. about 4 minutes. Meanwhile toast the bread until golden brown. Brush the bread with the remaining tsp. of olive oil. Rub with the peeled garlic clove then sprinkle with parmesan cheese. Spoon the Marinara sauce onto the toast and top with the fried egg. Serve immediately.
